I'm stuffed: peppers packed with mince beef

You really can't go wrong with pepper's stuffed with anything...........but mince beef & melted cheese is a winner!

Ingredients

FOR THE PEPPERS

4 bell peppers (any colour)

salt & pepper to taste

FOR THE MINCE

2 red onions 2 carrots

1 cloves garlic

1 tsp chili flakes 1 tin 400 g chopped cherry tomatoes 250g minced beef 1 glass of red wine salt & pepper to taste

Instructions

FOR THE PEPPERS

1. Preheat oven to 200 °C 2. Cut peppers in half from the middle and discard the seeds 3. Place bottom or top of peppers in a baking tray with a shallow pool of water and bake for 15 mins

4. Dip each chicken strip into milk and place into dry ingredients

FOR THE MINCE

1. Add 1 tbsp of extra virgin olive oil to a medium heat frying pan 2. Finely chop onions & carrots and add frying pan and cook until softened 3. Add the mince and fry until light brown

4. Add chili flakes, chopped tomatoes, red wine, salt and pepper to frying pan and let reduce for 25mins

TO STUFF THE PEPPERS

1. Remove peppers from oven and let cool

2. Spoon in between 4-5 tbsp on the mince beef into each pepper until full

3. Top each pepper off with a handful of your favourite cheese and bake on grill for 5 mins
