CRUMBED. CHICKEN. PESTO. & veggies

I could eat crumbed chicken all day, everyday!

 

PREP TIME:5mins COOK TIME:25mins TOTAL TIME:30mins SERVING:4 PEOPLE

Ingredients

4 boneless chicken breasts

2 tbsp bread crumbs

2 tbsp olive oil

1 tsp dried lemon chicken spice

1 tsp salt

1 tsp pepper

1 tsp garlic salt

1 tsp chilli flakes

2 tbsp store bought pesto

1 cup of red Leicester cheese

2 cups of string beans

2 cups of diced butternut

Instructions

1. Preheat oven to 180 °C

2. Toss your butternut in an oven dish with a bit of olive oil & salt & pepper to taste, place in oven for 25mins

3. In a small bowl mix, olive oil, chicken spice, salt, pepper, garlic salt and chilli flakes together and evenly coat each chicken breasts with your mixture

4. Place the chicken breasts in an oven dish and evenly sprinkle the bread crumbs over the top of the chicken breasts

5. Place chicken in the oven for 20mins

6. Take the chicken out after 20mins and slightly smear the pesto over the top of each chicken breast and then sprinkle the cheese on top

7. Put the chicken back in the oven for 5 mins

8. While the chicken is cooking, bring water to the boil for the beans & place beans in boiling water for 5mins
